Gourmet Meatloaf Recipe

I have many fond memories of meatloaf. It smells so yummy when it's baking. It's super easy to make and best of all, it's relatively inexpensive. Below is one of my favorite versions of meatloaf. You can use different types of meat if you like. You can also add in additional spices such as parsley and basil, cayenne pepper or garlic salt. Feel free to get creative and experiment with the recipe to find the flavors that suit your taste buds.

Gourmet Meatloaf Recipe 

Serves 4
Prep Time: 10 minutes
Cook Time: 45 minutes

 

 

 

INGREDIENTS:

2 Tablespoons Extra Virgin Olive Oil
1 cup Onion, finely chopped
2 Garlic Cloves, minced
2 teaspoons Salt
1-1/2 teaspoons freshly ground Black Pepper
1/2 teaspoon Red Pepper flakes
2 teaspoons Worcestershire sauce
1-1/2 pound Extra Lean Ground Beef or Turkey
1/2 pound Ground Pork or Italian Sausage
2 large Eggs, slightly beaten
1 cup plain Bread Crumbs
1 14-ounce can Italian Tomatoes, diced

DIRECTIONS:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large heavy skillet saute the onion and garlic in olive oil, over medium-low heat for about 5 minutes; stir occassionally.
  3. Add salt, pepper, red pepper flakes and Worcestershire sauce. Cook for 1 minute.
  4. In a large bowl, combine the meats, eggs, bread crumbs, and sauteed vegetables.
  5. Form into a loaf and place in a lightly greased rectangular baking pan.
  6. Bake meatloaf in oven for 45 minutes.
  7. Drain juice from tomatoes and pour over the top of the meatloaf.
  8. Return to oven and continue baking for 15 minutes.
  9. Remove from oven and let sit for 5 minutes.
  10. Transfer to serving platter and voila - you have a delicious Gourmet Meatloaf!

Herb Crusted Chicken Breast

The following recipe is taken from my cookbook, "The Diva Diet," available at Lulu.com.

Servings: 4 Preparation time: 10 minutes
Cooking time: 25 minutes
Ready in: 35 minutes

INGREDIENTS:

4 Chicken breasts, boneless & skinless (4 ounces each)
2 cloves Garlic, mashed
1 tablespoon Lemon juice, fresh
2 teaspoon Sage, fresh, chopped
2 teaspoons Thyme, fresh, chopped
1 teaspoon Rosemary, fresh, chopped
1/4 cup Vegetable broth (home-made or canned)
Sea salt and freshly ground black pepper, to taste

DIRECTIONS:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. Place chicken in glass baking dish and season with salt and pepper.
  3. Bake chicken for 20-25 minutes, or until it is no longer pink. While chicken is cooking chop herbs.
  4. In a separate small skillet add chopped herbs, lemon juice, broth, pressed garlic, salt and pepper. Heat on medium heat for just 30 seconds.
  5. When chicken is done, slice and place on platter.
  6. Drizzle herb sauce over chicken ans serve immediately.

Gourmet Italian Side Dish

I am a huge fan of Giada DeLaurentis of Everyday Italian at the Food Network. If you haven't watched her show, and you love Italian food, you should tune in. You'll be glad you did!

Her recipe for Gourmet Italian Potatoes, Tomatoes and Green Beans has quickly become one of our favorite side dishes. It's super easy to make and for about $5.00, you have a delicious tasting, healthy side dish that will serve four.

INGREDIENTS:

2 Tablespoons Extra Virgin Olive Oil
1 14-ounce can whole White Potatoes
1 14-ounce can cut Green Beans
1 14-ounce can diced Italian Tomatoes
1/2 cup shredded Mozzarella and Parmesan cheese blend

DIRECTIONS:

In a large skillet or WOK pan, heat olive oil over medium-low heat. Drain water from the potatoes and dice potatoes into quarters, or smaller depending on the size of the potato. You want them to be about 1/2-inch bite-sized pieces.

Cook potatoes for about 5 minutes. Drain green beans and add to potatoes. Cook for another 5 minutes, stirring occasionally. Drain juice from tomatoes and add to potato mixture. Stir ingredients together and let simmer for 5 minutes.

Sprinkle shredded cheese over the top of the mixture; transfer to serving bowl and serve.

NOTE: You can alter this recipe and use regular Idaho potatoes, fresh green beans and tomatoes; however, you will need to adjust the cooking time accordingly. You can add minced garlic and diced onions if you like. Just saute them prior to adding the other ingredients.

Grilled Gourmet Lunch Meat Sandwiches

Anyone who knows me will tell you that I love to experiment in the kitchen. Several years ago I had the pleasure of working as a prep chef in a popular health food store and later went to work at a prestigious private Country Club. I picked up a lot of techniques and discovered just how much fun food can be!

Last weekend we were a little low on groceries and I decided to see what I could whip up with what was lurking around in the fridge and pantry. I found one-half of a poppy seed baguette, half a package of pastrami and 1/3-package of brown sugar ham lunch meat; half a jar of sundried tomato pesto; and 1/2-cup of shredded Cheddar cheese.

Believe it or not, these make a very tasty gourmet sandwich. I'm sure you could use most any type of bread, lunch meat or cheese, but keep the pesto. That's the part that makes it gourmet! To make these grilled gourmet lunch meat sandwiches, follow these simple instructions:

  1. Preheat a griddle (or skillet) to 350 degrees Fahrenheit.
  2. Melt about 1 tablespoon of butter and using a pastry brush, lightly coat one side of each baguette slice.
  3. Lightly spread sundried tomato pesto on the opposite side of each baguette slice.
  4. Place 3-6 slices of meat per sandwich on the griddle.
  5. Place each baguette slice, butter side down, on the griddle.
  6. Sprinkle a small amount of shredded cheese onto the pesto side of each slice of bread.
  7. Place 2-3 pieces of the heated lunch meat on top of each slice of bread. This helps to melt the cheese.
  8. Place two slices of bread, along with the meat & cheese together. Then using a spatula, flatten the sandwich out.
  9. Remove from griddle, transfer to a plate and enjoy!
